Inspired by Edinburgh’s Pentland Hills this is an attempt at recreating the type of ‘white’ loaf that our ancestors would have enjoyed 2 hundred years ago. Baked in 2kg loaves (rather than 7lb like many families would have had) for enhanced flavour and keeping qualities. The particles of bran add a sweetness and depth to the flavour. As 2kg is a little much these days for the average family this loaf can be cut into halves or quarters. If kept properly this loaf can be enjoyed for up to a week. It is the baker’s favourite.
